A new restaurant is set to open in Tashkent within the gastronomic cluster The Gastronome, becoming part of a large-scale concept that combines strong international brands, original projects, and a new level of restaurant culture in Uzbekistan.
Entrecôte Café de Paris is a restaurant legend with nearly a century of history. The brand is known worldwide for its unique single-menu concept and signature Café de Paris butter, the recipe of which has been kept secret for four generations.
The story began in 1930 in Geneva at Café de Paris on Rue du Mont-Blanc, where Chef Boubier created the famous Café de Paris butter — a recipe whose exact composition remains a closely guarded secret. In 1942, he passed the recipe to his daughter and son-in-law, Mr. Arthur Dumont, who turned the restaurant into a concept proving that true gastronomic success is built not on variety but on the flawless execution of a single idea.
The Entrecôte Café de Paris formula has remained unchanged for decades: fresh green salad, 180 grams of selected entrecôte steak, signature Café de Paris butter, and homemade French fries. This simplicity, perfected over time, has become the brand's philosophy and earned it international recognition.
Today, Entrecôte Café de Paris restaurants operate in dozens of cities worldwide, including Geneva, Madrid, Dubai, Abu Dhabi, Doha, Erbil, Muscat, Riyadh, and others. Tashkent will become a new point on the brand's map.
The opening of Entrecôte Café de Paris in The Gastronome will be a significant event for Tashkent's restaurant market. For The Group, this is the first contract with an international restaurant franchise and an important step in developing the company's new gastronomic direction. The deal was brokered by The Franchizery (UAE, Abu Dhabi).

Today, the legacy of Entrecôte Café de Paris is continued by the Vuillamo family — the keepers of Café de Paris in Geneva and the original butter recipe. The butter is prepared exclusively in Geneva using the same method as 100 years ago, then flown to Entrecôte Café de Paris restaurants around the world.
Soon, the legendary taste from Geneva will be available in Tashkent at the new gastronomic cluster The Gastronome. The opening date is Q3 2027.
